“My grandfather created the recipe for ou Coquerel VSOP. He wanted to achieve the perfect harmony between the bright fruitiness of the appel and the sweet pieces notes coming from the French oak barrels. To do so, part of the eaux-de-vie is aged in heavily charred 200-liters barrels, extracting more color, spices, honey, vanilla, and silkiness”. – Pierre Martin Neuhaus
METHOD
First in the process is the selection of perfectly ripe apples. The first to drop are often rotten but it shows when the ripe apples are ready. The apples are then crushed into a mash and the juices are fermented for 28 days, then the distillation in traditional copper stills. Finally the aging the mixture is placed into fine French oak barrels, the comes the strategic role of the cellar master who enhances and magnifies each different kind of brandy.

Nose: baked apple, peppery
Mouth: candied fruit, sweet spices
Finish: apple, dried fruits
